All places have their own unique dishes. Bicol is known for anything with chilli and gata but there are also simple, household food that are unkown to many.
We cook "sinuwan" (kinalamansi-an). It is a mixture of camote leaves, baby gabi leaves that you coil, kalamansi (lemon), ginger, tomato, onion, tinapa (smoked fish) strips. Make a simple soup out of it. Put some salt to taste. ;)
